On the linked (download) page, the end of the opening paragraph says, "... and MacOS support is coming very soon." Maybe you would like to change that last sentence now that MacOS support is here.

I have uploaded a new version of the installer. After spending around ~4 hours battling all sorts of problems with getting the package properly notarized by Apple so it can run without Gatekeeper causing the error you captured, I finally found a third-party app that simplified the whole process and it seems to have worked. It would be wonderful if you can please download the file again, test it out and let me know if you no longer see the error.
On a side note, I previously published an x64 version which would run on Intel processors as well as ARM64 processors (the newer M1, M2 and M3 processors are ARM64), but it was much slower due to not being natively compiled for ARM64. The latest package I published was created specifically for ARM64. I'm going to upload a separate installer for older x64 devices a little later today.

Mike, the installer works; well done.
I cannot open the installed application because the application is not supprted on my Mac, so the message in front of me says. I have a 2017 iMac with an Intel i5 processor running OS X 13.7.1. I guess the app needs a modern Apple M processor. Like you say which versions of Windows are needed you probably need to mention which processor or OS version the Mac version needs.
I don't need the companion; I was just curious. I am more than happy with MobileSheets only on my iPad.

Thank you. Yes it installs, opens and works excellently. It is visually not an Apple app (Apple Developer Kit) but it works so fast and smooth that everyone will be impressed - and, as you say, the ARM version will be even faster. Wow!
I said I don't need the companion but I can already see how it can make managing songs easier than on an iPad. I will be spending more time using the companion.
There is only thing I cannot find how to do, something that is normal for Apple apps: click on a column heading and you get to see the whole table sorted in A-Z order by the heading you clicked on.

I'm glad to hear it's working well for you now! As far as the sorting, click the Sort dropdown at the far right side of the filters and change it to "Grid Column Headers". You can then click the headers to sort if that is your preference (the alphabetic grouping and list will be hidden).

Just one more thing while we are the topic of the companion app: the download page says it works on Android but Android doesn't appear as a download, just Linux, Windows and Mac.

The download page description says it's designed to connect to MobileSheets running on Android, Windows or MacOS. That is still true - I'm just pointing out that MobileSheets supports those three platforms and the companion app can connect to any of them.
