If you put them in a collection, the songs will displayed in the order shown on the top menu bar (typically "Sort: A-Z" )

If you put them in a set list, they will be displayed in the order that you insert them (typically "Sort: Manual" unless you override this ). You can reorder items by dragging to a new position.
A set list is typically what you want if you are "performing"
