If you purchased through the Microsoft Store originally, load up the Microsoft Store, search for MobileSheets and you should see an option to update to 3.0.0. It's possible the update just hasn't been delivered automatically to you yet. You'll want to uninstall the beta version after backing up your library as that version is going to stop working at the end of the month.
