Go to Settings->Library Settings->Tab Selection and Order if you want to add the composers tab to the list of displayed tabs on the library screen.

You can also long press a song to select it, tap "Edit Song" at the top of the screen, go to the composers field, add the name of the composer you want to delete, long press that entry and select the option to delete it from the library.
