You can use an application like OBS (https://obsproject.com/) to capture your screen and save it to a file, but you are going to need to make sure that I can see what you are tapping on. So if you are using a finger instead of a mouse, there is most likely a feature you can turn on to more clearly show what you are tapping on (a setting in Windows). The other option is to just set up a phone to record you using the app, which lets me see how you are interacting with the app. That would be my preference and wouldn't involve having to set up something like OBS. You will have to rig up the phone to capture this though, and if you don't have something like a camera stand or boom mic stand, that may be a little more difficult.
