I don't support synchronizing to a user's own iCloud folder at the moment. That's something I may consider supporting in the future, but it most likely wouldn't work well, as it would go through Apple's file picker and I would treat it like a local folder on the device, so it would appear like the synchronization finished almost immediately, even though Apple would have to handle the actual cloud synchronization in the background (so you wouldn't know when it was actually finished).

If you pick the iCloud option in MobileSheets on the library synchronization screen, I am synchronizing to the dedicated MobileSheets iCloud folder and I do extra processing to wait until synchronization actually finishes for each file. Apple calls this is the ubiquity container (https://developer.apple.com/documentatio...entifier:)). This is all part of what Apple calls CloudKit.
