There currently is no way to hide the top bar. You can hide the bottom bar though by tapping the overflow button at the very top left (circular icon), and tapping the option for "Show Settings". If I allow you to hide the top bar, what action should bring it back? I think what I will do is allow the sheet music to be panned down an amount equal to the height of the top bar. To pan, use two fingers aligned horizontally, and drag down.
