I think you guys are approaching this problem from the wrong direction. Rather than spend money on fancy brackets and holders, just buy a decent music stand. Something like this one - http://www.thomann.de/gb/thomann_orchest...remium.htm - will cost less and be far more useful all round.
Stands made out of a few flat strips of metal are way too flimsy to safely support anything more than a few sheets of music (no surprise there, that's what they were designed to do) and we all know how easy it is to knock one over.
A stand, such as the one in the link, is far more substantial and you can safely place the tablet on it without resorting to clamps, Velcro, etc. and I am quite happy to put my 13" tablet on one of these.
