You can assign a touch action both to turn a single page, and to turn two pages. This overrides the half page turns so that you can turn a full page or even two pages when needed. Is that not sufficient?

The only gestures I have been able to get to work consistently are turning my head to one side or the other, and that's my "half page" turn, which is my default.  As well, I'd have to remember when to do a double turn vs a single (although I could add an annotation to remind myself).  I'll play around to see if I can get a 2nd gesture working; as well, I can try going back to full page turns.

FYI, I tried cropping off the top half of the page, but the half turn mode then just shows me half of the cropped page.
