I had to reset MibileSheets since it no longer read jpgs and is now in English instead of Italian. How can I solve it? Thank you

In the top right corner of the screen, choose the overflow menu (3 three white dots aligned vertically).
Then choose 'Settings', Then choose 'Display Settings', then 'Language', finally choose 'Italian'.

You definitely should not be having issues with jpg files with the latest update. When you say you had to reset it, did you uninstall and reinstall? That shouldn't have been necessary just to install an update. Rudy's advice should work to get you back to using the Italian translation though.
