If I have and audio file associated with a music file, the audio player opens automatically when the music file is selected. Is there a setting to only open the audio player when it selected, not every time the music file is opened?

By default, the audio player is only shown with the overlay, or if the user triggers an explicit action to show the audio player. Did you change the default settings for the audio player?

I don't believe that I have changed then defaults, but what setting should I look for to correct the condition that I have now?

Open a score, tap the settings icon at the top right corner of the audio player, then change the "Fade Out" option to "With Overlay", and check "Fade Out Completely". Then the audio player is only shown with the overlay. Those are the default settings related to this.
