Is it possible to set up subcollections? I'd like to organize it so that I have a collection of sheet music within the current collection, allowing multiple parts for each piece without relying on setlists.

No, subcollections are not supported. You can add multiple PDFs to a single piece/song in the library though if desired. At some point I am considering supporting groups of setlists and groups of collections, but this will not allow collections to be placed within collections. It is just adding one level of depth to the hierarchy to allow grouping of setlists, and possibly collections.
