I‘m using Mobilesheets since last year, and I like it!
I replaced my Samsung Tablet (Android) by a Apple iPad (iOS).
I know how to transfer the data from one device to another, but do I really have to buy MobileSheets for iOS again? I already bought it for my Android Tablet.

Yes, the app is sold separately through the Apple App Store and purchases are not shared between stores, as they are run by completely separate companies. It also took years of work to port the app from Android to iOS, as it's written natively for iOS for the best compatibility and performance. Additionally, I spend a considerable amount of time maintaining the iOS version and every new feature I add has to be implemented specifically for each OS, as different frameworks are used on each platform. So purchases for each platform help support development for that platform.
