I have just realised that I still have the original free Mobilesheets, as well as the Pro version. Can I delete the original providing I make a fresh backup of the Pro version? Thanks,

Yes you can. I recommend doing this for all users once they no longer need the free version. The two applications shouldn't be sharing any data so it's safe to uninstall one without it affecting the other.
