Can I have Mobilesheets make an automatic backup?

At the moment, no, MobileSheets will not make automatic backups. Creating a backup is an intensive process and requires that nothing else is modified in the database in the middle of the backup being created. So the rest of the application couldn't be used normally while a backup is being generated. So I'm not sure it really makes sense to try and support automatic backups. Other users have asked for a prompt to create a backup every so often (so that people don't forget to occasionally create one). That is something that I certainly can do.
