Although I carefully read the manual on the topic, I cannot manage to enlarge the size of the staff. Nothing happens when a let my finger on it...

Hello Aramis,
It is a multi-step process - you must first position the piano staff where you want it to be and pause for a second with your finger still down. The piano staff will then lock into place and then you can drag it right to extend it. If you drag it up or down, you can enlarge or shrink it. That is how you control the size of the staff. As a side note, if you've already created the staff, you can select it, and resize it using the circles, but it seems to be a little finnicky when enlarging or shrinking it, so I may need to look into that.
